Lemon Balm

A bright, citrus-soft mint relation, the gentle end of the shelf.

Melissa, grown by a co-op of small market gardeners around Werribee. The dried leaf carries an unmistakable lemon-citrus perfume and a soft mint structure underneath. Brew five to seven minutes for an evening cup that does not push back.

It sits in the gentle end of the shelf, next to our Camille, peppermint.
